As a food tech startup, Paleo is rewriting the story of meat and how it is produced. Using only yeast, the company has developed a portfolio of heme proteins (i.e. myoglobins) that are completely identical to the actual animal proteins found in beef, chicken, pork, lamb, tuna, and even mammoth.
Thanks to their proprietary precision-fermentation process, Paleo’s myoglobins are also free of GMOs, setting the company apart.
